The poblano pepper is one of the most versatile of all the chili peppers. Poblano peppers have a heat rating between a bell pepper and a jalapeno. Organic poblano peppers typically grow to about 6 or 7 inches long and have a heat rating of 1,000 to 2,000 Scoville units. Poblano peppers are most famous for 'chile rellenos' (stuffed chili peppers) and their use in authentic mole poblano sauces.
The mature red poblano is significantly hotter and more flavorful than the less ripe, green poblano. When ripe poblano peppers are dried, they are known as the 'ancho' peppers and often used to make chili powder.
